A: Yes, they must be kept refrigerated because they are cold processed (not cooked but cold packed then vacuum sealed). Buy keeping them cold they will stay crisp and fresh for a very long time. If you do forget to refrigerate your pickles they are still good, but will not taste as fresh.
Q: Why do my pickled garlic fizz when I open the jar and why do they turn green?
A: The fizz is caused by the vinegar making the garlic work. The pickling process continues in the jar and sometimes when the jars start to get warm the pressure will build up in the jars and the gases release upon opening, so we recommend that you always open the jars over a sink.
A. The garlic turns green as part of the natural process of being in vinegar. Because we use no preservatives, the garlic starts to turn green. This is a natural process and there is nothing wrong with the garlic.
In both cases, the garlic is still safe to eat because the vinegar helps preserve them.
Q: What is the difference between a half sour pickle, a sour pickle and a full sour pickle?
A: All of my sour pickles are made in a crock.
